Zaatar Chicken Pizza


Zaatar Chicken pizza Recipe is the easiest recipe you can make. It's topped with Zaatar, Shredded mozzarella, shredded chicken (spiced with zaatar), red onion, cherry tomato, and some more cheese.

I make lots of dough and each time I make it I make it differently. HOW DO YOU LIKE YOUR PIZZA?
I like it crunchy, so I would add flour, yeast, salt, olive oil and water, as simple as that. But my kids like it soft, very soft. If you like it soft, there is a video for you down below. it's literally for beginner, and with no machine.
No Lebanese bakery compare to this dough. It's also great for Mana'esh, spinach and meat pies, and mini pizzas, or maybe a loaf of bread.

What makes the pizza soft?
Yogurt. Yogurt  inhibits gluten development, you can also substitute with powder milk.





This homemade dough is made of, yogurt, sugar, salt, yeast, baking powder, milk or water, and flour.

**NOTE: When your making your pizza or Mana'esh stretch the dough out until it is very thin, don't worry once you bake it's going to rise because of the baking powder.
Also you can skip adding baking powder.




Tips for making quicker Pizaa Dough:
  • Start with room temperature yogurt, and warm milk or water
  • Knead very well until smooth
  • Divide the dough


***keep in mind that when making your dough you might need less or more flour, I used 2 1/2 and I could go with 2 1/4, you might need even more depending on the flour brand. the trick is to wash your hands if it's too sticky, or you can add a little more oil, i love using non-stick spray oil. Remember you need very soft dough.

Zaatar Chicken Pizza

Serving:4 pizzas

Ingredients

  • 2-3  cups flour
  • 1/4 cup Greek or plain yogurt
  • 1 cup warm milk or water
  • 1 tbsp sugar
  • 1/2 tbsp yeast
  • 1 tsp baking powder
  • 1 tsp salt
  • 2 tbsp olive oil
  • 2 tbsp Zaatar+2 tbsp olive oil
  • 3/4 cup shredded chicken
  • 1/4 cup sliced red onion
  • 1/3 cup cherry tomato

Direction:
  1. In a medium bowl, add in yogurt, sugar, and salt, stir very well. Add milk gradually, yeast and baking powder, stir and add only 1 cup of flour, mix until well combined. Cover and rest for 30-40 mins. 
  2. After the the first part has been proof, Now add the flour, I would start first by one cup and knead, and then 1/4, and then another 1/4 cup or 1 tbsp(1/4 cup=4 tbsp). Then 1 tbsp of oil, keeping the rest for the end helps you when the dough is sticky. Knead about 5 mins, the dough should be smooth. Sprinkle flour, cover and rest until double in size(it shouldn't take long about 20-30 mins)
  3. Preheat the oven to 500 degrees F.
  4. Divide the dough into 4 pieces. Stretch or roll out 1 piece into very thing round, if it's shrinking then you need to rest dough for 5 mins and then try stretching it or rolling it again.
  5. Mix the Zaatar with olive oil, and spread it on the dough, add mozzarella cheese, then shredded chicken, sliced red onion and cherry tomatoes. Some more extra cheese , lastly sprinkle Zaatar spices.
  6. Transfer the pizza to the oven, place it in the middle or top rack and bake until the crust is golden and cheese is melted and has browned a bit. between 6 to 10 mins.
